Every now and again, we like to have breakfast for dinner or Brinner as we like to call it.
I especially like recipes for breakfast foods that are quick and easy.
Tonight, I served up Egg Nests for Brinner with fries on the side for hash browns.
They were soooo yummy!!!
Egg Nests
Ingredients:
- 12 slices of bread
- 12 large eggs
- Salt and pepper
- 6 teaspoons butter
Directions:
Preheat over to 350*F
Grease a 12-cup muffin tin. Remove crust from bread. Place one bread slice in each muffin cup; push down gently so it looks like a cup with 4 corners.
Carefully drop a raw egg into each cup. Sprinkle with salt and pepper. Top each egg with 1/2 teaspoon butter. Bake 15 minutes or until eggs are cooked and bread is toasted.
**Makes 6 servings

Overall, they were a hit in our house. We decided we are going to play with the recipe next time and add some bacon pieces and cheese on top of the egg.
